Roasted Root Veggies
I think I need to plan tomorrows veggies. Simple. Intense flavor. Outstanding. The best pan for roasting veggies, that I have found is the one that comes in the bottom of your oven. The bigger the better. It conducts heat evenly and cleans up nicely too. It would clean up a lot nicer if I had...

Zucchini : I promise if you've ever liked anything green, you'll like this.
Simple - Buttery - Healthy, dare I say. Shred 6 Zucchini (I use the C whizzie) Heat up 1/2 stick of Butter - the real stuff add Zucchini add 1 1/2 TBS Dried Dill Sautee 5 Minutes Eat a 1/4 cup if you can stop there. I can eat 1/4 of the pan, but that's, as they say, another story. Enjoy!!!
