Roasted Elephant Ears

Well, my plan for roasted root veggies was foiled by the good folks at Publix. I must live by the smallest store with the least variety around. They did not have Parsnips or any other suitable substitute I was interested in so I pulled back and punted. I picked out some really cute veggies instead.... Sign in to see full entry.
