Big tasty lunch

Lunch lately has been my major meal of the day. Breakfast is often just soup or eggs or oatmeal, but lunch gets my energy and attention. Probably because by then I am actually awake! Today in the Kitchen...

Actually, it began last night with thawing out some brown rice, and attempting to make tasty fried rice. The rice was stickier than I'd planned. But fried rice is actually all about the additions. Yesterday I mentioned one of my favorite breakfasts: steel-cut oats! I use McCann's quick-cooking oats by choice. They cost more, but are the best to my taste. The Irish know how to oat!
