I am roasting a chicken today, because it has been languishing in the freezer long enough, and the day is cool enough to have the oven on that long. It takes a long time because I roast it from frozen, at a low temperature. It will be wonderfully tender and juicy this way, though at some point in the early stages, once it is thawed enough, I will have to retrieve the giblets packet from the inside. There are some fresh beets, a couple of long Chinese eggplants, some sweet onions and some carrots... Sign in to see full entry.
